Fresh fresh fresh! This Island Dreams Salad Recipe is very fresh and light. This salad is a little like coleslaw in the sense that it has cabbage. After that, the similarities stop. It has a wonderful aroma with the sesame oil and Asian flavors. Your friends will love you when you bring this to your next picnic or pot luck.
Island Dreams Salad Recipe
Ingredients
- 1/2 cup dole pineapple, mango, peach juice
- 1/2 cup light soy sauce
- 1/2 cup sesame oil
- 1/2 cup seasoned rice wine vinegar
- 4-6 cups shredded cabbage
- 1-2 cups shredded carrots
- 1 cup mixed peppers, thinly sliced
- 1 bunch green onions, thinly sliced
- 1 bunch cilantro
- 1/2 large yellow onion (or one small one), thinly sliced
- 1/2 cup Chinese Rice Cracker with Nuts Mix
Note: This recipe can be any combination of cabbage and other vegetables. The above list is just what I used when I made it and it was great. But, use what you have and don’t fret.
Instructions
In large bowl, add all the vegetables. In a separate bowl, combine the liquids: juice, soy sauce, sesame oil and rice wine vinegar. Toss the salad with the dressing and let it set for about 10 minutes. Serve.
Variations: Try adding 1/2 cup of crushed pineapple or some diced dried mangoes for a fruity flair.
Make it just for you!
Notice that the dressing is all equal parts, so use 1 Tbl of each juice, soy sauce, rice wine vinegar and sesame oil for your personal salad. Put whatever vegetables you have. You can use regular cabbage (what I used) or Nappa Cabbage. You can also try adding shredded broccoli, thinly sliced bok choy, or whatever you have on hand.
For a pot luck, make it in advance
Just put the veggies in a large zip lock back and the dressing in a plastic container and toss at your party.
