I make this easy weeknight chicken recipe when I am out of time and just need something quick and easy that my whole family will eat. Similar to my mom’s Smothered Chicken (recipe coming this fall), this chicken has a delicious rich flavor and is super easy to make any night of the week.
Easy Weeknight Chicken Recipe
Ingredients:
- 6-8 Boneless chicken thighs
- 1 tsp Marjoram
- 1/2 tsp Garlic Salt
- Ground Pepper, to taste
- 1 Tbl Butter
Optional: - 1/2 cup water
- 1 Tbl cornstarch
- 1 cup Extra Dry Vermouth
- 1/2 Tbl Better than Bouillon
Instructions:
Sprinkle Marjoram, garlic salt and pepper over raw chicken. In sauté pan, heat up Butter. Brown chicken on both sides. Reduce heat, cover and simmer for 15 minutes, or until chicken is done (165 degrees or more). Remove chicken from pan.
In small bowl, mix cornstarch and water. Set aside.
In sauté pan, add Vermouth and Better than Bouillon to pan. Increase heat to high and cook down for about 2 minutes. Slowly mix in cornstarch and water mixture to pan and cook for about 1 more minute to create a creamy sauce.
Pour sauce over chicken. Chicken is delicious without sauce and is great for small children.
