Some Pinterest ideas are great, some not so great. This one started out with what I thought would be good. I love pancakes. I love banana pancakes. So I tried this recipe seen all over Pinterest.
It starts out so simple, just eggs and bananas. Two ingredient pancakes… Wow! No sugar! No Flour! Awesome!
So I mashed up the bananas, added the eggs and decided to add some vanilla (I love vanilla in everything).
Then I melted some butter in a pan…
And poured in the batter:
Sounds good so far, right? Looks good too. I flipped them when they had cooked edges, just as in regular pancakes:
They even didn’t look too bad when fully cooked, albeit a little on the thin side:
So why was this a FAIL?
The flavor was just odd… I use bananas a lot in my “no sugar added” recipes since I really love the flavor of bananas. But in this? It was too overpowering. Maybe if I added maple syrup it would have tested better, but again, I’m looking for no sugar added with no flour (of any kind) as well. So adding the syrup is just not going to work for me.
In addition, the pancakes were really thin. Since there was nothing to bind the eggs and bananas together, it was more soupy making the pancakes really thin. So it felt like I needed to eat a whole stack to get a full serving.
I’m not sure if I’ll try this again and try to adapt it. We will see. I allow myself oats, so maybe I can make an oat flour to add some density to the pancakes. Maybe add cocoa powder to cut the intensity of the bananas? I’m not sure it’s worth it. The best part about pancakes? The syrup! So, without syrup, maybe I should just not try.
