These Thai Meatball Lettuce Wraps from The Garlic Diaries is a winning recipe. Definitely worth the try.
My friend sent me this pin on Pinterest to see if we wanted to make it when my family was going to visit them in their house in South Lake Tahoe. I loved the look of the recipe and how it read so we went for it.
We had a great time working together, I chopped up some veggies, she chopped up others. We mixed the meatballs, cleaned the lettuce, formed meatballs… it was a great recipe to work together. We had so much fun.
So, now down to the recipe. The lettuce we used was way too big, so the balance of meatballs, slaw, and lettuce made them very difficult to eat with our hands. In general, I think the meatballs were too heavy to hold in the lettuce cups. The other problem was that the meatballs didn’t get browned, they were more steamed than browned.
So, my changes to this recipe would be to start with a smaller lettuce and one that is a little thicker, like butter lettuce. One change we made was to add cilantro to the meatballs and that worked really well. The last change would be to up the temperature of the oven to 425 or 450 degrees so that the meatballs actually brown.
