This is a great egg casserole that is prepared the night before and then baked in the morning. My mom, Cherri, and her friend Sharon created this casserole for their many brunch events that they hosted.
Prepare casserole dish by spraying it with Pam cooking spray (9x13 for single batch, shown is a 5qt Dutch oven for double batch).
Add the cut up bread, ham and cheese. Mix together.
In a separate bowl, mix together the eggs, milk, dry mustard, salt and pepper. Pour over the bread mixture and press the bread into the egg mixture to fully cover.
Cover and refrigerate overnight.
Preheat oven to 350 degrees.
Bake casserole covered for about 1 hour if single batch or 1.5 to 2 hours if double batch. The center should not be fully cooked and the casserole should be raised. Serve hot.
Combine bread, ham and cheese and spread in lightly greased 9x13 pan. Combine remaining ingredients and spread over first mixture. Cover and refrigerate overnight. Bake 1 hour at 350 degrees.
I have provided my adjusted recipe which is a little more accurate than the original. I believe the original recipe didn’t have enough eggs. But, I’ve provided both to you again, so you can compare. This was the inspiration for my Skillet Eggs for Brunch recipe that I posted earlier in the year.
I’m sorry the picture doesn’t do it justice, but it was Christmas morning and I was tired. I didn’t have the time or energy to create the perfect picture. 🙂 Also, I used wheat bread which changes the color of the casserole.
This is also perfect for when you have company, you can wake up and pop it in the oven before you start getting ready. It will be done by the time everyone wakes up.
