Chipotle Chicken Pasta Salad

This dish is my take on a pasta salad I had at Zanotto’s Family Market in San Jose. Every time I go there, I get this pasta salad and burn my mouth but just love it. I recreated the recipe and lightened up on the mayo and spice (to not burn my mouth). Try this Chipotle Chicken Pasta Salad Recipe for yourself and let us know how many peppers you like!

Chipotle Chicken Pasta Salad

Ingredients
Directions
Step 1

Cook pasta according to package directions. Drain and rins with cold water.

Step 2

In large bowl, mix together remaining ingredients and toss in pasta. Refrigerate for one hour. Mix well before serving, adding a little mayo to freshen if needed. Top with fresh Cilantro.
