Eliza Makes Potato Leek Soup

Ingredients

5lb Potatoes (peeled and diced) 5 lb Potatoes
3 Leeks (diced) 3 Leeks
3 Small Carrots (diced) 3 Small Carrots
2 tablespoons Unsalted Butter 2 tablespoon Unsalted Butter
Chicken Stock Chicken Stock
Salt & White Pepper (to taste) Salt & White Pepper
Chives (chopped fine for garnish) Chives
Truffle Oil (for garnish) Truffle Oil

Directions

Step 1

Melt the butter in a stockpot, and then sweat the leeks. Add the potatoes, leeks and carrots and cover with chicken stock. Add salt and white pepper, to taste, and simmer for 30 minutes. Puree either in a blender or using a hand blender. Garnish with chives and 3 drops of truffle oil.
