Start by making your Lemon curd and giving it time to cool. You can make your lemon curd a day or two in advance.
Next make your Candied Lemon Zest and set aside.
Now it's time to make your mascarpone cream. In a mixer (like a Kitchenaid), use the whip attachment. Add the mascarpone cream, egg yolks, heavy cream, sugar, and salt to the mixer and start by whipping slowly to combine. Once combined, bring to a high and whip quickly until almost stiff. It should only take a minute or two. Be careful to not over beat or it will get grainy.
The last step is to assemble. You can make in a 9x9, pan 9x13 pan or individual servings as show. Whichever way you choose, start by mixing the lemon simple syrup with the limoncello. This is what you are dipping the cookies in.
Start your dessert with a thin layer of lemon curd. Then quickly dip your crunchy cookies into the limoncello syrup mixture and place on top of the lemon curd. Next layer the mascarpone cream and then repeat until you are at the top of your dish. I find 2 layers is just right.
Top with the candied lemon zest and refrigerate for at least 2 hours. Serve and enjoy this amazing bright lemony summer dessert.
